Momma's Baking Powder Biscuits

  • So a few posts back folks were asking if I would share the biscuit recipe I like.  Well, this is the one I've grown up with (sometimes without the sugar).  They're super easy to make and so delicious to eat! 
  • INGREDIENTS

  • 3 cups Flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 6 tablespoons butter, at room temperature
  • 1 to 1 1/8 cups cold milk (use whole milk for the most tender biscuits)

Instructions


  1. Preheat your oven to 425°F and find an ungreased baking sheet.  
  2. Mix together the flour, salt, baking powder, and sugar.
  3. Work the butter into the flour mixture using your fingers until it's crumbly.  This is the rascals favorite part.  They call it 'smooshing'.  Not to be confused with smooching (wink) 
  4. Add the milk slowly.  Momma's training was always to add it slowly while you mix because you can always add more but you can't easily remove it once it's there.  Side note - don't mix it for too long.  That can make the biscuits tough.  Just long enough that the dough is cohesive.
  5. Place the dough on a lightly floured work surface. Another favorite kiddo part.  They really like helping to spread out the flour on the countertop.  Gently roll the dough out -about 3/4 inch thick. 
  6. Now you're ready to cut the biscuits out.  I have about 300 round cookie cutters, but somehow the kiddos and I always reach for a water glass.  I think it's cause they're readily available.  The last time I made this recipe we got 12 nicely size biscuits out of it and that was even with some little hands sneaking bites of the dough! 
  7. Hopefully by now your oven is preheated - unless you're like me and didn't remember to turn it on! Either way, it's super helpful to have it at 425 F before you put them in to back.  Let them bake for 15-20 minutes (keep an eye on them - they brown quickly and rise up nicely)!  Some of my favorite ways to serve these (as taught to me by my wonderful momma)  are chicken gravy (think chicken, carrots, peas all in a gravy and poured over top of biscuits) or with beef stew.  They're yummy with real butter and a good jelly (or maybe it's jam or maybe preserves - I get confused on which is which but they're all great).  
  8. We rarely have leftover biscuits, but when we do they're super tasty rewarmed and eaten for breakfast with a 'cuppa' tea.  No pictures of making them this time around - maybe next time or next project.  I hope you have fun making them and even more fun eating them - let me know how they turn out!
